He is an AM professor of contemporary history at the University of Bologna. He has dealt with social history and social movements, the history of fascism and anti-fascism, the history of republican Italy. His most recent publications are  Storia dell’Italia unita (con L. Ganapini), Garzanti, 2010; Un Paese in bilico. L’Italia degli ultimi trent’anni, Laterza 2014, Fascismo e antifascismo. Storia, memoria e culture politiche, Donzelli, 2018.

The history of pasta described by the profound historical, economic and cultural dynamics of a transformation of taste that was also – and above all – a social transformation.
